Red pepper and Turkey sausage spinach salad w/ Red Potato fries and healthy Chipotle Dip!

Here is another one of my... I'm down to the bare bones in my fridge, what can I come up with... Type of recipes! I love these type of recipes, because they're almost always fantastic!!

1 Bag of freshly rinsed spinach leaves
1 Fresh red pepper
2 Links lean turkey sausage
Handful of dried cranberries
Kraft Basil parmesan vinaigrette dressing
6 Red potatoes
1/2 C 0% fat plain Greek yogurt
1 Tbls Reduced fat Chipotle Mayo
2 Tbls Olive Oil
Sea salt to taste
Lawry's Seasoning salt
Pepper to taste

The Salad!

Start by pre-heating on med/high heat your pan with 1 tblsp EVOO
I personally have an issue with casing on just about anything, so I actually remove my sausage from the casing and fry in the olive oil. Slice red pepper in long thin strips and add to the almost cooked sausage. Reduce heat and allow to cook until tender. Add sea salt to taste.
Once cooked, cut sausage into smaller pieces.
Add spinach to bowl. Top with sausage, red peppers, and vinaigrette. Sprinkle dried cranberries on top!

The Fries!

Preheat oven to 450 degrees.
Slice potato in to long thin strips. In bowl, drizzle potatoes with EVOO, sea salt, pepper, and seasoning salt. Place on baking sheet. Bake for approx. 25 minutes or until golden brown.

The Dip!

The dip!! It's so incredibly easy and absolutely devine! Just mix 1/2 cup greek yogurt with 1 tblsp chipotle mayo and mix! See for yourself how absolutely yummy it is with almost no guilt!

Happy Eating!

Yum!

I will remember you... And smile...

After reading Heaven is for Real I decided I wanted to find a way of giving a happy memory to such a terrible loss. When we lost Buddy after having him for 13 years we planted a beautiful dogwood in the front yard of our new home in memory of him and every time the tree buds or the leaves are so healthy and green it brings me a happy memory of my sweet Buddy.

The more I thought about it, I realized how much I love plants, especially flowering ones. There were these two terribly ugly plants right beneath a window in the front landscaping of our home. I've been wanting to rip them out forever, but never had anything good in mind to replace them with so just left it be. After our sweet baby went to heaven I felt it would be fitting to replace those two plants with one large beautiful plant. Especially fitting because, those two plants were directly beneath the window of what would have been our second child's bedroom.

I went to Linton's who happen to have a huge sale this time of year and found a Red Heart Rose of Sharon. The garden associate informed me that these plants require lots of sunlight(perfect for the front of our home) and bloom each year at the end of summer/ early fall. What's special about that you're wondering? Late summer/early fall is when our second child went to be with Jesus in heaven.

I consider it a great honor to know that we have a beautiful baby in heaven looking down on us...

Each year when your plant blooms, I will remember you, and smile...

Our precious Angel Baby

I was reading "Heaven is for Real" excited to see what this little boy had to say about his divine appointment with the creator of the universe. Not many people can say they met Jesus face to face in this life, much less actually visit heaven so I was pretty amped up for the read. I however, wasn't anticipating that this book might actually change the entire course of my life!

As I was reading the book it mentioned while they were trying for their second baby they became pregnant. Unfortunately 2 months later they suffered from a miscarriage. It was only briefly mentioned at the beginning of the book so I didn't think to much of it until later.

This little boy, Colton, was technically their third child. At the same age as my son he suffered from appendicitis so badly that it poisened his system and nearly died. In the weeks, months, and years later he began to share with his parents that he had seen heaven while in his life saving surgery. Not only had he seen heaven, but he met God the father, Son, and Holy Spirit.

As the book explains it, one day the boy went to his mother and said, "I have two sisters." Well he had an older sister and younger brother but his mom couldn't make sense of what he was saying at first. They had never told their son about losing their second child, and they were never aware of the sex of the baby as the child was too tiny to have ever known.

Colton went on to tell his mother that he had two sisters and he met his other sister in heaven. She came right up to him and just hugged him for a long time at first. He described her as looking very similar to his older sister Cassie, except having dark hair. He asked her what her name was to which she responded that her parents had never named her, but God had adopted her and she was excited for her parents to make it to heaven to be with her. For a three year old, turning four little boy to simply "make up" the things he was saying much less even know a good portion of the things he was describing was simply impossible.... unless he had actually been to heaven and experienced it for himself.

I was visiting my family in North Dakota when my Aunt approached me asking if I had ever read this book. Of course I hadn't so she urged me to read it while I was here. I'm not much of a reader but after hearing what the book was about I was excited to read about our future home.

As I read about Colton's experience with his older sister in heaven, I began to cry. I began to cry, because just a couple weeks ago I was in my 7th week and almost 2 whole months pregnant when we also lost our second child. I wrestled with God as to why he allowed this to happen and whether or not we would meet our child in heaven. I even wrote a poem talking about this baby as our Angel baby always believing our baby was truly in heaven.

God gave me an amazing gift... the gift of knowing that our second child is indeed in heaven and is patiently awaiting our arrival in heaven. I could not imagine a gift any greater... to know that we have a beautiful child in heaven looking down on us.

Thank you Jesus!

Breakfast!! I don't know about you, but I love breakfast. But I'm not your traditional breakfast eater... pancakes, waffles, bacon, etc is a bit heavy for me, so I prefer something a bit lighter! Here is a great yogurt that is fat free, very light, yet satisfying! And of course DELICIOUS!!

Vodka Cream Avocado Lasagna

So I began russling through the cupboards for something to make for dinner... I found lasagne sheets, and a few other things that would make for a good lasagne and created my own amazing recipe! I hope you enjoy this as much as my family did!

Here are the ingredients I started with...

1 lb italian lean ground turkey
1 jar Newmans own Vodka Sauce
Skim milk
Mozzarella cheese
Parmesan cheese
Avocado
Spinach (Opt.)
Barilla lasagne flat no boil sheets

(Vodka cream sauce tends to be a little thick straight out of the jar so adding about 3/4C -1C of skim milk to a jar of sauce will give it the perfect consistency, reduce the fat(if you use less), and make the sauce nice and light. It may seem a bit runny, but the pasta will need and soak up all of those added juices!)

Layer the ingredients... you can use more or less based on how much you are comfortable with.

Yummy!!

  • Heat oven to 375 degrees.
  • Lightly brown ground turkey in pan maintaining some moisture to prevent the meat from drying out. ( I added rosemary, thyme, oregano to the already seasoned meat for added flavor.)
  • Using a 9 x 13 baking dish place a small amt of diluted vodka sauce on the bottom of the pan. ( This will help with cooking your sheets and keeping the pasta from sticking to the bottom of the pan.)
  • Layer 4 pasta sheets slightly over lapping on bottom of dish.
  • Next place a small layer of avocado and turkey sausage.
  • Finish off bottom layer with a layer of mozzarella and parmesan cheese.
  • Follow suit with a similar layer of pasta, sauce, avocado, meat, and cheese.
  • Depending on whether you choose to do 3 or 4 layers you can continue suit for the next layer or finalize with the top layer.
  • For the top... pasta, sauce, and cheese mixture.
  • Before placing in oven place a nice amt of diluted sauce mixture all around the pan making it almost even with top layer. The juices will cook out and leave you with a deliciously moist and perfectly cooked lasagne.
  • Bake at 375 degrees for 40-60 minutes or until sauce is bubbling or juices have mostly diminished.

Side  Dish Recommendations:
We paired our delicious lasagne with freshly harvested corn on the cob thanks to our sweet neighbors for growing it!

Happy Eating!!

Angel Baby

I dreamt of seeing that little heart,

Beating on the scan.

I dreamt of caressing my big belly,

Anticipating holding your hand.

I dreamt of painting your room,

Hoping for a baby girl.

I can see it now, pinks, pearls, and glitter galore

All for the hope of you.

My reality was an ultrasound,

With no heartbeat in sight.

My reality was a doctor,

Telling me, you’ll probably lose your baby tonight.

Those hopes and dreams,

Suddenly came crashing down.

The hope of a big belly, that so many take for granted,

Was only in my dreams now.

The pain is great, in every way imaginable

A pain for some, that is never even fathomable.

Someday I only hope to make these dreams a reality,

But nothing will ever replace, my sweet little angel baby.

Pinterest is the bestest: Homemade Granola Bars

I'm pretty sure this recipe just keeps evolving! This was orignally adapted from Rachael Ray and revised by Lauren from the site Lauren's Latest.

http://www.laurenslatest.com/no-bake-chocolate-chip-granola-bars-easy-healthy/

So I decided to add my own spin to the recipe since I didn't have everything it called for in my pantry... and voila!

Here is the recipe!

3 Tblsp butter
1/4 cup honey
1/3 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal (Substituted Honey bunches of oats)
1/2 teaspoon vanilla
2 tablespoons mini chocolate chips (Crumbled 3 squares of a Hershey's chocolate bar)

Pinch of Cinnamon

...I also added a few pinches of flaxseed...

First I combined the dry ingredients:

:: Mix your oats, cereal, and cinnamon(opt) in a large bowl. You'll want to wait to add the chocolate chips until the end since they will melt if you add them in right away, however a few added chips in the mix may not be all bad! My friend added butterscotch chips to the mix and the melted flavor was fabulous!

Now time for the Wet Ingredients:

Combine honey, butter, and brown sugar in a pan. Bring to a bubble, then reduce and cook for about 2 minutes. Add Vanilla before mixing with dry ingredients.

Pour Wet ingredients over dry ingredients and coat all dry ingredients...

Next you can use a small baking sheet, glass pan, etc to put mixture in... make sure to pack it in tightly since that's the key to getting it to stick!

Now you can add the chocolately chippys on top! I crumbled a Hershey's bar since that's all my pantry contained, but anything chocolatey will work!

And VOILA!!!!

YUMMALICIOUS!

He is not here, for He has RISEN!!

Easter... what a wonderful day!! Began our day with our amazing church family and saw lots of wonderful people! After service they had a Helicopter drop the candy for the kids... that was about the coolest thing ever! After church we had the family over for Easter dinner and another Easter Egg Hunt. A fun filled day, but I needed to remind myself at the end of today what the day was all about...

"There was a violent earthquake, for an angel of the Lord came down from heaven and, going to the tomb, rolled back the stone and sat on it. His appearance was like lightning, and his clothes were white as snow. The guards were so afraid of him that they shook and became like dead men. The angel said to the women, “Do not be afraid, for I know that you are looking for Jesus, who was crucified. He is not here; he has risen, just as he said. Come and see the place where he lay." Matthew 28:2-6

"HE IS NOT HERE; HE HAS RISEN!!!!!"

                                         Happy "Jesus is Alive" Day!

Our first ever 5K!!

A few weeks ago we signed up to run our first 5K and what better way to do it than as a couple! We ran it with several friends which made for a great time! As a girl I had to treat myself to a new running outfit for the run... since I usually run in whatever is clean and not very fashionable!

But wouldn't you know when we got there they gave us free t-shirts for participating so we couldn't help but all be matchies! The run was simply fantastic!! My hubs and I didn't run together as he's quite a bit faster than I, but our awesome friends Joe and Diana stayed together and looked awesome as they finished! This was a first for ALL of us so we were all pretty stoked!! The run was so relaxing... we ran on gravel and pavement at times. The start of the run was along a stream then took a turn around a field of cows and finally back along the stream to the finish line. It was the most relaxing run, but I found it extremely hard to set my pace and dare say it took me probably atleast a mile into it! Lots of fast runners were passing by which reaked havic in my mind for the first bit until I was able to set my pace and get comfy! It was really nice... I was mid pack with lots of space around me to just relax and run... simply awesome! The best feeling in the world was rounding the corner to the finis line! As soon as I turned and spotted the finish I sprinted... looking to my left there was my wonderful husband cheering me all the way to the finish line... it felt amazing! So excited to start preparing for a 10K and many more to come!

Here are some pictures of our awesome crew!

                                                                          Pre Race...

The awesome finishers!!

Pinterest is the bestest!

So, my sweet friend told me she wanted to start blogging about pinterest ideas that she actually brought to life... so I decided to do that as well!!

This is not my first Pinterest project, but one that I have captured! My husband and I own a home and recently cleared out his office to make it in to our spare bedroom... within two weeks we had a queen size bed, frame, cabinet, etc... to make our spare bedroom fantastic and paid little or nothing for ALL of it! I love how God blesses us even in the little things in our life!

One of the only things I was missing was a nice picture to put above the bed in our spare room. The theme in the room was yellow and grey so when I saw this I knew right away what my colors would be!

I found the idea on pinterest to take a canvas, simply paint a vine and use the bottom of a pop bottle to create the flowers. I let my imagination take charge and "A" Vine turned in to several vines with Many flowers, but 45 minutes later I had single handedly created a masterpiece! Or atleast I would like to think so! ;)

This is my first real "painting" ever and I'm quite proud! Below is the link if you also would like to "take-on" this project and I can assure you, you will not be disappointed!! Good luck and happy painting!

A Beautiful Bug...

Taydin and I were playing outside one afternoon and spotted this on our lightpost. At first I nearly flicked it off thinking it was a leaf but at closer glance I quickly realized it was not a leaf, but a bug!! At first I was completely grossed out since I nearly touched it, but as I began to really look at it I couldn't help but notice how beautiful this bug was! How well does that relate to so many of life's circumstances?! When we're first faced with something we think, theoretically speaking, oh gross!! Or, God why on earth would you allow me to go through this?! But as we get more time to reflect we realize how beautiful our situation was... or maybe not beautiful, but how much closer we are to God at the end of it... and that my friends is beautiful!

A Hot Cocoa kind of day

Snuggled up with a blanket, a good book, or maybe even homework... all make for a hot cocoa kind of day! Took this picture during the winter and just love the way I feel everytime I look at it!

Now what?

So I was in nursing school and without getting into a wicked long story that did not work out... so now what do I do?! I have thought about going back at some point and then again I have thought about changing my major to counseling and getting a Masters in that... mind you I have no degree as of yet, just a whole lot of credits!!

However, ever since December I have been a stay at home momma... and I LOVE IT!!!!! We are making some plans for the future, but that's currently a secret so for know it must stay that way... :/

Anyway.... I'm a stay at home momma and life is fantastic! I feel so torn as I know I should be contributing to the family and I have our entire married life, but now I feel like being home with our bugs is the most important thing! So do I wait to go to school until Taydin's in school?! Do I slowly finish a degree while I stay at home although it couldn't be nursing because that's not offered online with any of the colleges I attend... So my next thought is counseling. There is a two year program offered at our local community college and it's all online... PLUS my grants and scholarships would cover the cost! That's a big one!!

But here's my dilemma... my heart is still in nursing. Seeing my pt's faces in my head brings me back to nursing everytime... I loved it and I love them! Every tear I cried on ONC and every heartbreak I experienced was worth it for the sake of the amazing pt's....

So you can probably see somewhat why I am so confused. My hubby would like me to get back to work, but I really want to have an education and so I can do what I really love... but it just feels like it's going to take forever.... :/
